I survived.... A week.

It's been a week since I started my vegan diet, and it is way easier than what I expected and I like it! Doing this whole vegan diet has made me become even more creative in my cooking, which means new yummy menu items for me! I am a big dessert lover, but thanks to google I have found some clean vegan desserts that hit the spot! Like these peanut butter cookies I made:


I also thought it would be hard coming up with easy lunch ideas, but I was wrong, here is a chickpea salad sandwich I made... I will post this recipe soon I promise. Made it up myself!

Physically I feel great! I feel more energized, get less headaches, and having an easier time exercising. 

I am not missing eating meats or
eggs because I am finding easy recipes to follow. 

I will leave you with an easy vegan tip: whether or not you are vegan, use mashed avocado in place of  mayonnaise in different salads you make. It has the same texture, and is a healthier alternative. Make sure to add a little lemon juice so it doesn't turn brown!
